I want to share with you my favorite Christmas cookie recipe. These are super easy with very few ingredients and melt in your mouth. I even won a cookie contest with these! I learned to make them in my cooking class at Tomales high school with my favorite teacher Miss Issel. I wish I knew where she was and could thank her for teaching me to cook and sew.
Pecan nut ball cookies
From Ms. Issel’s cooking class, Tomales highschool
Cream until light and fluffy:
1 cup butter
1/2 cup confectioners sugar
Stir in:
2 Cup flour
1/4 tsp salt
add:
1 1/2 tsp vanilla
3/4 cup chopped nuts (pecans or walnuts)
roll dough into small balls and place on greased cookie sheet or parchment paper
bake 400° 10-12 minutes

Great recipe. I make mine with black walnuts bake and cool a bit then dust with powdered sugar. Luv them.
